1 tbsp olive oil
1 red bell pepper, diced
1 pint cherry tomatoes, halved
8 oz baby spinach
4 garlic cloves, minced
2 green onions (whites and greens separated)
1 lb ground beef
½ tsp dried oregano
Salt & pepper to taste
2 tbsp crumbled feta (optional)
Instructions
1. Sauté the tomatoes and bell pepper: Heat olive oil in a pan over medium-high heat. Add the bell pepper and tomatoes and cook for 4–5 minutes until tomatoes blister. Add garlic and cook 1 minute.
2. Add spinach and onion whites: Add spinach and the white parts of the green onion. Stir for 2–3 minutes until wilted. Transfer vegetables to a plate.
3. Cook the beef: Add the ground beef to the same pan with oregano, salt, and pepper. Break it apart and cook until browned. Drain if necessary.
4. Combine and finish: Return veggies to the pan, stir in green onion greens, and top with feta.
